Here is one of my favorite recipes. Since I obey Jewish religious laws for food (Kashrut), there is plenty of "cultural elements", too.

Peel and core 4 avocados. Put in a food processor's bowl. Add 1/4 cup lemon juice. Make a puree.
In a small pot melt 40 g/1.4 oz butter. Add 2 tbsp flour. Fry stirring constantly until lightly golden. Remove from heat, add 2 cups milk. Stir well. Return to heat and cook stirring until the sauce thickens. Sprinkle with salt, white pepper, nutmeg. Add 2-3 drops tabasco. Leave the sauce in a double boiler so that it remains warm.
In a large frying pan melt 40 g/1.4 oz butter. Fry about 2 min on each side 6 pieces of salmon, about 150-200 g/5-7 oz each. Add avocado puree to the white sauce and warm up. Serve immediately.
