Thai Stir Fry

Will provide an enjoyable and nourishing meal.
1 cup reduced fat coconut milk
2 tbsp coriander
2 stems lemongrass
1 tbsp peanut butter
1 cup brocolli floretts
10 baby sweetcorn
2 oz mange tout
2 oz sugar snap peas
1 orange pepper
2 green chillis
1 red onion
3 cups beansprouts
Cooking Time: 10 min

Serves: 2-4
Cooking Instructions:
Blend together coconut milk, coriander, green chilli, lemongrass and peanut butter. Put aside.
Chop onion. Stir fry onions in a wok, until golden brown.

Add brocolli and sweetcorn. Stir fry for a further 2 min. Add beansprouts. Stir fry for 2 min. At this point heat earlier mixture over medium heat until warmed to taste. Now add remainder of ingredients. Stir fry for a further 3 min before serving.

Serve with sauce drizzled over it on its own or with rice.
