Derby Day Mint Julip

A. 1 large handful of fresh mint (collected day before use, in early morning with accumulated dew)
1/2 cup sugar
1/2 cup water
B. 1/2 cup shaved ice
C. sterling silver mint julip cup, chilled overnight in the freezer.
D. double jigger of the best quality bourbon whisky you can afford (Maker's Mark or Virginia Gentleman is nice.)

Cooking Instructions

These are the ingredients for one mint julip to be served during the afternoon running of the Kentucky Derby. If you want more, increase accordingly.
A. The night before making the julip, make a simple syrup of the sugar and water, and macerate it the tender leaves of mint. Let syrup cool in the refrigerator overnight. Reserve a sprig of mint for garnish.
B. Well before the start of the race, shave the 1/2 cup of ice, and reserve in the freezer.
C. Just before the start of the race, remove the silver julip cup from the freezer, add the ice and enough simple syrup to fill 1/2 up the cup garnish cup with the reserved mint sprig.
D. Throw cup out the window. Drink the double jigger of bourbon as "They're off!".
