This wonderful, light meal has been enjoyed by my 'yankee' in-laws from Kansas, and by my 'cher cousins et cousines' down the bayou. If you can't find the Tony's seasoning, they have a website (who doesn't?): www.cajunspice.com
Ingredients
2 lbs large uncooked shrimp (peeled, de-veined, de-headed)
1 large yellow bell pepper
1 large red bell pepper
2 zucchini
2 yellow squash
1 large onion
1 package fresh mushrooms
Tony Chachere's Creole seasoning mix
Garlic powder
1 1/2 cup Italian salad dressing
Tabasco sauce
Olive oil
Parmesan cheese

Cooking Instructions
Wash all veggies and cut into bite sized pieces. Put veggies and shrimp into a large ziploc bag, pour Italian dressing over them, add Tony's, Tabasco, and garlic powder (to taste). Marinate in the fridge for an hour.
Pour a thin layer of olive oil on a cookie sheet and sprinkle liberally with Tony Chachere's. Pour contents of freezer bag onto cookie sheet, sprinkle with Tony's, more garlic powder (if desired), and Parmesan cheese**.
Place in oven and broil for approx. 14 minutes. Serve over rice or egg noodles.
**Fresh, crumbled Feta cheese makes a good substitute.
